Spicy Tomato and Garlic Chutney (Sugar Free)
1 tablespoon olive oil
1 finely chopped onion
2 chopped tomatoes
2 dried red chilies (leave out if you can’t handle ‘spicy’!)
2 tablespoons dried garlic flakes
4 sachets artificial sweeteners
100ml white vinegar
¼ teaspoon smoked paprika
¼ teaspoon cayenne pepper
1 teaspoon curry powder (mild or spicy)
Cover chili and garlic flakes with boiling water and leave for 30 minutes or so do ‘reconstruct’ – or use minced garlic and chili if preferred
Fry onions and tomatoes in olive oil – lower heat to simmer for about 20 minutes until softened.
Add rest of ingredients and simmer at very low heat for about 30 minutes until liquid is reduced.
Cool off and bottle 🙂
Great with roasted chicken, pork, beef, egg dishes or cheese platters!
